Blend butter and sugar. Mix on a medium speed until, fluffy. Add vanilla (essence and bean extracts) to the mixture.
Mix on a low speed. In two batches, add eggs and flour, until a dough forms.
Roll the dough into a log and wrap in baking paper or plastic. Place the dough into the fridge for 2 hours or up to a week.
Bake; Preheat oven to 180 c (350F) and line trays with baking paper.
On a lightly floured board, roll out dough (1/4 inches thickness).Using a cookie cutter, cut out shape and transfer to trays. Chill your bunnies in the fridge for 15 minutes. Then bake them in the oven for 15-20 minutes, rotating trays halfway through. Transfer onto a wire tray and cool.
Icing
Blend one egg white and a cup of icing sugar. Beat on a medium to high speed for 5- 7 minutes (until fluffy, yet dense). Spread the icing onto the cookie. Place the bunny into a pool of sprinkles.While the icing is setting; MAKE HOT CHOCOLATE, create a burrow made from pillows & and nibble on sprinkled cookies x
